Avocado Toast with Poached Eggs and TRUFF Oil: A Simple Yet Delicious Brunch

Avocado toast has become a brunch staple for many, and for good reason. It's a simple yet incredibly satisfying dish that can be customized to your liking. This weekend, my oldest munchkin requested an avocado toast for breakfast, and I was happy to oblige. I decided to elevate the dish with poached eggs, a few other toppings, and a special touch suggested by my son: truffle oil.





Ingredients:

  • 1 ripe avocado

  • 1/2 lemon, juiced

  • Salt and pepper to taste

  • 1 slice white mountain bread, toasted

  • 1 tomato, diced

  • 2 poached eggs

  • Freshly grated Parmesan cheese

  • Black pepper

  • Mixed greens

  • Fresh fruit

  • TRUFF Truffle oil



Instructions:

  1. Prepare the avocado: In a bowl, mash the avocado with the lemon juice, salt, and pepper.

  2. Assemble the toast: Spread the mashed avocado on the toasted bread and add some diced tomatoes.

  3. Add toppings: Top with poached eggs or your choice of protein (bacon, sausage)

  4. Finish with cheese, pepper, and truffle oil: Sprinkle with freshly grated Parmesan cheese, black pepper, and a generous drizzle of truffle oil.

  5. Serve with sides: Serve with mixed greens and fresh fruit.



Tips for Poaching Eggs

  • Use a strainer: To ensure clean poached eggs, strain the egg whites through a fine-mesh strainer before adding them to the hot water.

  • Add vinegar: Adding a splash of vinegar to the hot water helps the egg whites to coagulate more quickly.

  • Don't let the water boil: Make sure the water is simmering gently, not rolling boiling.




My Thoughts

This avocado toast with poached eggs and truffle oil was a hit with the whole family. The creamy avocado, tangy tomatoes, runny yolk of the poached eggs, and the rich aroma of truffle oil create a truly indulgent and satisfying dish.The addition of fresh greens and fruit adds a touch of freshness and makes it a complete and balanced meal.
