Creamy Scallop Croissants: A Delicious Twist on a Classic

Craving something more exciting than your average croissant? Look no further than these Creamy Scallop Croissants!This recipe takes the buttery, flaky goodness of a croissant and elevates it with a luxurious cheese sauce and plump,seared scallops. It's the perfect combination of textures and flavors for a truly unforgettable bite. But wait, there's more! I'm adding a touch of extravagance with Heritage Free Range Blue Eggs. Their yolks boast a rich, creamy taste that takes this dish to the next level.





Ingredients:

  • 2 croissants

  • 1 pound scallops

  • 4 tablespoons butter (divided)

  • Chopped garlic

  • 1/2 cup white wine

  • Heavy cream

  • 3/4 cup grated parmesan cheese

  • 3-4 egg yolks

  • Black pepper

  • Old Bay seasoning (optional)

  • Freshly chopped chives


Instructions:

  1. Prep the Croissants: Preheat your oven and toast the croissants until they're golden brown and flaky. While they're baking, whisk together the grated parmesan cheese and egg yolks in a bowl. Set this cheesy mixture aside.

  2. Sear the Scallops: Pat the scallops dry to ensure a perfect sear. Heat a pan over high heat and add two tablespoons of butter. Once the butter is melted and shimmering, add the scallops and sear them for about 1-1/2 minutes per side until golden brown. Remove the scallops from the pan and set them aside.

  3. Create the Creamy Sauce: Add 2 more tablespoons of butter to the pan and melt it. Once melted, add the chopped garlic and cook until fragrant. Pour in the white wine and simmer for a few minutes, scraping up any browned bits from the bottom of the pan.

  4. Whisk in the Creamy Goodness: Reduce the heat to very low and add the heavy cream. Let it simmer for a minute, then slowly whisk in the cheese and egg yolk mixture. Turn the heat off and continue whisking until the sauce is smooth and thickened. Season with black pepper to taste.

  5. Bringing it All Together: Add the cooked scallops back to the pan and gently stir them into the creamy sauce.

  6. Stuff those Croissants: Slice the tops off the toasted croissants and fill them generously with the cheesy scallop mixture.

  7. Finishing Touches: Sprinkle with Old Bay seasoning (optional) for a touch of savory goodness and garnish with freshly chopped chives for a vibrant pop of color.
