Today, as part of the AAPI month honored recipes, we're taking a trip to Japan with a delicious recipe for Curry Udon, a classic Japanese dish that's sure to hit all the right spots. Just a few simple ingredients come together to create a flavor explosion of savory broth, melt-in-your-mouth beef, and perfectly chewy udon noodles.
The Essence of Simplicity:
The beauty of this recipe lies in its ease. Forget complicated ingredients or lengthy prep times – this Curry Udon comes together in a flash, making it perfect for busy weeknights or a cozy weekend lunch.
Here's what you'll need:
Aromatics: 1/2 medium onion, thinly sliced, to saute, a pinch of salt
Protein: 1/2 lbs of thinly sliced beef (your preferred cut)
Broth Base: 1 1/2 cup Bone broth and 1/2 cup water (or pre-made vegetable broth)
The Star of the Show: Japanese curry roux (cubes or blocks)
Umami Boost: 3 tbs Soup base (optional, such as dashi) or Soy Sauce
Noodles: 2 Frozen (preferred) or pre-cooked udon noodles

Customize the Protein: While thinly sliced beef is traditional, you can also use chicken, pork, or even tofu for a vegetarian option. You can also use the frozen shredded beef for Philly cheese steak too!
